Chicken, ranch, and bacon stromboli

Sometimes I wish I wasΒ  Betty Crocker and the Pioneer Woman, all rolled into one amazing cook, who baked all her own bread, made healthy meals every day, and took killer photos to document.

But in reality, some days I’m just trying to come up with a quick, easy meal, that I need for my famished crew πŸ™‚

Stromboli is something I can make, and have no complaints. But this is the 1st time I have tried this recipe. And in fact, its not a recipe, but some thrown together ingredients.

I worked very hard at making the dough πŸ˜‰ I went to the store, and bought frozen bread dough. I know, nothing to be proud of.Β I rolled it out, snapping quick photos as I went, under poor lighting conditions. sorry if you came to see pretty photos πŸ™‚ Perhaps another time!Next, I added Ranch dressing, spread it down the middle, added crumbled, cooked bacon, and mozzarella cheese.

After that, I added the chicken. You could cook your chicken, and use that. You could use rotisserie chicken. Or, you could do like I did, and get canned chicken at the store. Yes, I should can my own chicken, and maybe I will eventually do all I set out to do with canning and freezing πŸ˜‰ But this works for me, as I am all about quick and easy πŸ™‚You could use whatever cheeses you like. I added a little cheddar cheese as well.I struggle with rolling the dough out evenly too πŸ™‚ So for the last step, pull dough together, making sure there are no holes. Flip over, and add butter, seasoning, etc. to the top. And its ready to bake!

I actually just used butter on the top of my chicken Stromboli. I also made a ham, cheese, and salami version, and this is how that one looked, right before baking.And then, what is really nice, is when you have a daughter taking home economics class at school, and she brings home a salad πŸ™‚ And that’s a wrap!

March felt like it came and left in a hurry πŸ™‚ Although it still seems like Winter around here.Β  Two highlights of our March…

A cabin trip with family… We had not been away in awhile, so it was great!! We were glad our weekend did not end like last year πŸ˜‰ Yes, very glad! πŸ™‚

The other highlight was promoting in my company πŸ™‚ I had worked and prayed for this for awhile, and it all felt like a big hug from God!! The joy of sharing with others, and seeing their lives change, as well asΒ  wanting to give more, and help pay off debt quicker, has been such a driving force in my why!!

And the bonus will be such a huge blessing! πŸ™‚ I am so grateful! We counted down my points I needed, and it was so fun to have the children share in the excitement πŸ™‚ I felt so much love and support!!Some random things…

We have a cardinal friend who flies up to our window every day, and taps on it πŸ™‚ We love watching him!!My babe and I ❀We love this for a quick lunch!! Flatbread, ranch dressing, bacon bits, canned chicken, cheese. So tasty πŸ™‚

All about food

Just for fun, I decided to take some pictures of the food we’ve been consuming around here in the past couple weeks. I’ll include a few recipes as well.2016-04-01 18.45.27Grilled sausage from our pigs, Lettuce and hard boiled eggs with homemade dressing, and Cheesy Mashed Potatoes with Bacon.

Cheesy Mashed Potatoes with Bacon

2.5 lbs. potatoes

8 slices bacon

4 oz. cream cheese

1/4 cup butter

1/2 cup sour cream

1/2 cup milk

1 cup cheddar cheese

1 cup mozzarella cheese

salt & pepper to taste

Peel potatoes, cut into small pieces. Cover with water and cook till tender. Fry bacon till crispy. Chop into small pieces. Drain water from potatoes and mash till fluffy. Add cream cheese, butter, milk, sour cream, salt & pepper, half the cheddar cheese, and half the mozzarella cheese, and mix well. Stir in half the bacon. Put potatoes into a buttered dish. Top with remaining bacon and cheeses. Bake at 350 degrees about 30 min.

  • This recipe came from pinterest, but I tweaked it a bit. They added chives to it, which I didn’t think my kiddos would like, so I eliminated that. I also added a bit of onion salt for extra flavor. They all loved them!
Lettuce Salad Dressing
2 cup sugar ( I use a bitΒ less)
1 cup miracle whip
1 cup milk
1 Tblsp. vinegar
Blend in blender till smooth. Add to lettuce and hard boiled eggs and toss. Yummy πŸ™‚

Melt 1/2 cup butter and add 1 bag of mini marshmallows. Heat and stir. Add 5 cups rice krispies. Grease wax paper and lay on a 10×15 in. pan. Add rice krispy mixture and spread.
1 1/2 cup chocolate chips
3/4 cup peanut butter
Melt together and pour on top of rice krispy mixture. Spread within 1 inch of edge. refrigerate 20 – 25 minutes and roll up lengthwise. cut into slices and wrap each sliceΒ with cling wrap. We love these!

12 – 16 slices bread
2 1/2 cups chopped ham ( I use chipped ham)
16 oz. cheddar cheese
16 oz. mozzarella cheese (I’ve also used cheddar/ Monterey jack cheese) You can always use aΒ lesser amount ofΒ cheese as well.
6 eggs
3 cups milk
1/2 tsp. dry mustard
1/4 tsp. onion powder
Grease 9×13 pan. Layer 1/2 bread, 1/2 ham, 1/2 cheeses. Repeat layers. Combine egg, milk, and seasonings. Pour over top. Refrigerate overnight. Cover andΒ bake at 375 degrees forΒ 40 – 50 min. Add corn flake topping below.
Topping: 3 cups crushed cornflakes, 1/2 cup butter, melted.
Bake 10 – 20 minutes more. Quick, easy, and good πŸ™‚

Enchiladas Americano
1 lb. ground beef
1/4 cup sour cream
1 pkg. taco seasoning
1/2 cup cheddar cheese
1-2 cups baked beans
You can also add a 4oz. can of mushrooms if you like. Mix all ingredients. Spoon into crunchy taco shells and lay in 9×13 in.Β pan.
1/4 cup sour cream
1/4 cup cheddar cheese
1/4 cup salsa
Mix and pour over taco shells. Bake at 350 degrees for 20 – 30 minutes. Serve with lettuce, tomatoes, and sour cream or Ranch dressing. This recipe is from the cookbook “Heartwarming Recipes from Our Family’s Table”. I adjusted it a bit to our likes. It calls for soft taco shells, but my family likes it better with the crunchy shells. I love this recipe for something quick and flavorful!
2016-04-01 10.51.41Little cheddar meatloaves, mashed potaoes with cream cheese, bacon crouton salad, and green beans.
Little Cheddar Meatloaves
1 egg
3/4 cup milk
1 cup cheddar cheese
1/2 cup oatmeal
1/2 cup onion ( I just sprinkle a bit of dried onion piecesΒ in it)
1 tsp. salt
1 lb. ground beef
Mix and form into 8 small loaves.
2/3 cup ketchup
1/2 cup brown sugar
1 1/2 tsp. mustard
Mix and add to top ofΒ loaves. Bake at 350 degrees for 1 hr. and 15 min.
Bacon Crouton Salad
1 head of lettuce
1 cup cheese
bacon, fried
1 cup mayo or miracle whip
1 cup sugar
3/4 cup oil
3 Tblsp. vinegar
1 tsp. onion salt
1 tsp. celery seed
Blend dressing in blender. Pour over salad just before serving. So tasty!!

2 lbs. ground beef
1/2 cup chopped onions
1 tsp. salt
1 loaf French bread
butter, softened
16 oz. sour cream
12 oz. cheddar cheese
Cut bread in half lengthwise. Spread with butter. Brown beef with onions. Drain and add salt. Remove from heat and add sour cream. Spoon on bread. Top with cheese. Bake at 350 degrees for 20 min. Goes great with a salad!
* I think I shared this recipe before, but it’s a favorite quick meal here, so I’ll share it again πŸ™‚ We like to eat this sandwich with barbecue sauce or Ranch.

I so enjoy these times with my family! I cleaned up a little bit, but I was going away that evening, so I didn’t have time to do it all. I asked the children to clean up, and I went out for supper with some friends, and came home, and they did a great job at tidying up. Win for me πŸ˜‰ Great memories!

Enchilada Casserole

A few posts ago, I posted this picture.20150312_182709One of my faithful readers said I should post the recipe. So here you go. For you, Jenny πŸ™‚

Layered Enchilada Casserole

1 lb. ground beef

1 onion, chopped

2 cups salsa

1 can (15oz.) black beans, drained & rinsed

2 Tblsp. taco seasoning mix or chili powder

1/4 cup Italian dressing

6 flour tortillas

1 cup sour cream (I used at least 2 cups)

1 package Kraft mexican style shredded cheese


Line a 9×13 in. baking dish with foil, with ends extending over sides. Brown meat with onion. Drain. Add salsa, beans, seasoning, and dressing. Mix well. Arrange 3 of the tortillas in a single layer in baking dish. (The recipe doesn’t say to grease the foil, but I had trouble with it sticking, so if I make it again, I will spray the foil with cooking spray before adding tortillas). Cover with layers of half each of meat mixture, sour cream, and cheese. Repeat all layers. Cover with foil. Bake covered, at 400 degrees, for 30 minutes. Remove foil. Bake an additional 10 min., or until heated through. Let stand 5 min. before feb and march 2015 297

Serve with chopped tomatoes and lettuce. I also ate mine with extra sour cream, and I tried some with Ranch dressing, and that was good too πŸ™‚ Enjoy πŸ™‚

Simple Things

I’ve been thinking lately of being happy and content with the simple things. For myself, sometimes I feel pretty content, and then the next time I’m thinking “boy, it would be nice to have that, look like her,have money like them,be as good a mom as she is,be creative like her,ect. ect. So being content is something I need to work at. I think we all do. And really, we are so blessed. I think sometimes if we’d have less, we would be more content. Why is it, that when we have so much already, we desire more? Perhaps our sinful nature.

I decided to post some simple things that I love and treasure. And in the spirit of simplicity, I chose not to edit any of these photos. I tossed that idea back and forth, just because I can be a bit obsessive compulsive. I think everything needs tweaking πŸ™‚ But, I stuck to the plan. A recipe from my mom…cookie bake, christmas, etc 021

1 lb. lasagna noodles

1 lb. hamburger

1 qt. spaghetti sauce

1 lb. mozzarella cheese

1 lb. ricotta cheese

2 eggs

Brown hamburger and add spaghetti sauce and any extra seasonings: ( salt, pepper, oregano). Mix cheese and eggs. Cover bottom of a 9×13 pan with meat and sauce. Add a layer of raw noodles. Here is where I change it . I like it better when I cook the noodles first πŸ™‚ Put all the cheese on the noodles. Cover with another layer of noodles. Add rest of sauce and meat mixture. Bake 1 good hour at 350 degrees. Let set 10 minutes before eating.cookie bake, christmas, etc 022I love how quick and easy this is to put together. Plus everyone likes it.cookie bake, christmas, etc 024The evening we had this, Jenna was not into eating. So she had a very small amount, and I did not eat much either. Downsizing my portions and all πŸ™‚ So we ate over half the pan of this cheesy goodness. Sometimes I wonder, is the amount of food we consume normal?? πŸ™‚ I’m just thinking how they will eat when they get a bit older. I find myself telling them sometimes that they’ve had enough to eat. I don’t want to be a dictator about it, but I also want them to learn to slow down and enjoy their food. To learn not to stuff themselves πŸ™‚
