Phone pictures and Ramblings

I haven’t felt like writing lately. The urge comes and goes. I’ve also had a break from taking photos, which is ok with me. In fact, the break will most likely continue with the arrival of our baby. That’s life. Ebbs and flows, things changing.

This was my project on Saturday. I’ve been putting it off, and thought I best get crackin’ 🙂 I don’t enjoy painting, so I felt a sense of accomplishment when I was done. Only about 5 more doors to go on this big farmhouse.

Well, the more healthy one 🙂 This baby makes me hungry!20160420_154714I’ve been sitting more than I usually do today, because of strong Braxton Hicks that don’t want to leave. So it’s extra calcium, and trying to stay off my feet a bit, per my midwife’s instructions. This baby wants to keep it interesting 🙂 My discomfort seems mild though, when I think of the young mother from church who is battling cancer, and dealing with pain. Life just seems so unfair at times, but God sees the bigger picture. And I’m so thankful we can give our worries and troubles to Him!

On this picture, he was feeling a bit better. Apparently, their Daddy’s phone was pretty interesting 🙂20160418_121819This morning a warm little body crawled into my bed, and snuggled up tight, wrapping her fingers in my hair. She loves her snuggles with me yet, and often gives my belly kisses (for the baby) 🙂 I sure do treasure those times, because her strong will and independence sure can be frustrating! This was a night that she told her brother she can feed the calves. So he gladly left her. The mom had to explain to him that she is not responsible enough to know who gets what. I may have to keep an eye on this chore handing off thing 🙂20160418_161508Today their was milk spilled over big sister’s dress right before it was time to leave for school. As well as all over the floor. There was wash to do, and toys to pick up, and dishes to wash. There was fighting, and back talk. And bad attitudes. From the Mom and children. A pretty normal day. I need more gratefulness in my heart for the mundane.

Should I be worried that my son has OCD? This was done of his own free will 🙂20160418_175413He’s definitely got some crazy organization skills 🙂

All about food

Just for fun, I decided to take some pictures of the food we’ve been consuming around here in the past couple weeks. I’ll include a few recipes as well.2016-04-01 18.45.27Grilled sausage from our pigs, Lettuce and hard boiled eggs with homemade dressing, and Cheesy Mashed Potatoes with Bacon.

Cheesy Mashed Potatoes with Bacon

2.5 lbs. potatoes

8 slices bacon

4 oz. cream cheese

1/4 cup butter

1/2 cup sour cream

1/2 cup milk

1 cup cheddar cheese

1 cup mozzarella cheese

salt & pepper to taste

Peel potatoes, cut into small pieces. Cover with water and cook till tender. Fry bacon till crispy. Chop into small pieces. Drain water from potatoes and mash till fluffy. Add cream cheese, butter, milk, sour cream, salt & pepper, half the cheddar cheese, and half the mozzarella cheese, and mix well. Stir in half the bacon. Put potatoes into a buttered dish. Top with remaining bacon and cheeses. Bake at 350 degrees about 30 min.

  • This recipe came from pinterest, but I tweaked it a bit. They added chives to it, which I didn’t think my kiddos would like, so I eliminated that. I also added a bit of onion salt for extra flavor. They all loved them!
Lettuce Salad Dressing
2 cup sugar ( I use a bit less)
1 cup miracle whip
1 cup milk
1 Tblsp. vinegar
Blend in blender till smooth. Add to lettuce and hard boiled eggs and toss. Yummy 🙂

Melt 1/2 cup butter and add 1 bag of mini marshmallows. Heat and stir. Add 5 cups rice krispies. Grease wax paper and lay on a 10×15 in. pan. Add rice krispy mixture and spread.
1 1/2 cup chocolate chips
3/4 cup peanut butter
Melt together and pour on top of rice krispy mixture. Spread within 1 inch of edge. refrigerate 20 – 25 minutes and roll up lengthwise. cut into slices and wrap each slice with cling wrap. We love these!

12 – 16 slices bread
2 1/2 cups chopped ham ( I use chipped ham)
16 oz. cheddar cheese
16 oz. mozzarella cheese (I’ve also used cheddar/ Monterey jack cheese) You can always use a lesser amount of cheese as well.
6 eggs
3 cups milk
1/2 tsp. dry mustard
1/4 tsp. onion powder
Grease 9×13 pan. Layer 1/2 bread, 1/2 ham, 1/2 cheeses. Repeat layers. Combine egg, milk, and seasonings. Pour over top. Refrigerate overnight. Cover and bake at 375 degrees for 40 – 50 min. Add corn flake topping below.
Topping: 3 cups crushed cornflakes, 1/2 cup butter, melted.
Bake 10 – 20 minutes more. Quick, easy, and good 🙂

Enchiladas Americano
1 lb. ground beef
1/4 cup sour cream
1 pkg. taco seasoning
1/2 cup cheddar cheese
1-2 cups baked beans
You can also add a 4oz. can of mushrooms if you like. Mix all ingredients. Spoon into crunchy taco shells and lay in 9×13 in. pan.
Topping:
1/4 cup sour cream
1/4 cup cheddar cheese
1/4 cup salsa
Mix and pour over taco shells. Bake at 350 degrees for 20 – 30 minutes. Serve with lettuce, tomatoes, and sour cream or Ranch dressing. This recipe is from the cookbook “Heartwarming Recipes from Our Family’s Table”. I adjusted it a bit to our likes. It calls for soft taco shells, but my family likes it better with the crunchy shells. I love this recipe for something quick and flavorful!
2016-04-01 10.51.41Little cheddar meatloaves, mashed potaoes with cream cheese, bacon crouton salad, and green beans.
Little Cheddar Meatloaves
1 egg
3/4 cup milk
1 cup cheddar cheese
1/2 cup oatmeal
1/2 cup onion ( I just sprinkle a bit of dried onion pieces in it)
1 tsp. salt
1 lb. ground beef
Mix and form into 8 small loaves.
Topping:
2/3 cup ketchup
1/2 cup brown sugar
1 1/2 tsp. mustard
Mix and add to top of loaves. Bake at 350 degrees for 1 hr. and 15 min.
Enjoy!
Bacon Crouton Salad
1 head of lettuce
1 cup cheese
croutons
bacon, fried
Dressing:
1 cup mayo or miracle whip
1 cup sugar
3/4 cup oil
3 Tblsp. vinegar
1 tsp. onion salt
1 tsp. celery seed
Blend dressing in blender. Pour over salad just before serving. So tasty!!

2 lbs. ground beef
1/2 cup chopped onions
1 tsp. salt
1 loaf French bread
butter, softened
16 oz. sour cream
12 oz. cheddar cheese
Cut bread in half lengthwise. Spread with butter. Brown beef with onions. Drain and add salt. Remove from heat and add sour cream. Spoon on bread. Top with cheese. Bake at 350 degrees for 20 min. Goes great with a salad!
* I think I shared this recipe before, but it’s a favorite quick meal here, so I’ll share it again 🙂 We like to eat this sandwich with barbecue sauce or Ranch.
