Thought I’d share with you a recipe we enjoy. It came from my mother-in-law, and I think it’s the best baked oatmeal 🙂 The secret is DON’T overbake 🙂 It’s just so much better when it’s not dry!


3/4 cup melted butter

1 1/2 cups brown sugar

3 eggs

4 1/2 cups oatmeal

3 tsp. baking powder

3/4 tsp. salt

1 1/2 cup milk

1 1/2 tsp. vanilla or maple flavoring

Beat butter and brown sugar till creamy. Add rest of ingredients. I add the oatmeal and milk last, alternating them so it’s less mess. Pour into a greased 9×13 in. pan. Bake at 350 degrees for 25-30 min. Another thing we eat at least 4-5 times a week is eggs. Devan has been asking to make them, so I let him if there’s time. I hope you all had a great Thanksgiving! We had a yummy meal at Dale’s parents, and this weekend we are heading to Maryland to celebrate with my family. My 2 older sisters live down there, so it’s always nice to spend the day there!

And if you are one of the crazy people that go shopping on Black Friday, bless your little shopping soul 😉 I would rather milk cows than do that 🙂 Maybe if you go with friends, and stop for coffee and breakfast it would be worth it. My highlight of shopping is always the eating out 🙂 Anywho, enjoy your weekend whatever you may be doing!

  1. Baked Oatmeal was an EVERY Sunday breakfast for Dan’s family when he was growing up!! So, I still make it from time to time. I am going to try your idea of maple flavoring next time. That sounds SO good!! 🙂
    I’m with you on the lack of interest in Black Friday shopping. I’ve done it already, but I don’t NEED anything that badly! 🙂

  2. Hey, I’m coming back to this old post to tell you something you already know. This really is THE BEST baked oatmeal recipe, ever. I made it for Easter breakfast and it was very popular, along with moist and delicious. 🙂 It sure blew my old stand-by recipe out of the water, but that doesn’t hurt me a bit. Thanks!
